Skateboard Cake


Creating custom sculpted cakes are always much harder then they look. Especially when one is doing a sculpted cake  truly all cake…..NO rice krispy or Styrofoam in the cake.  Then sizing it up and down.  An engineering task. Here at Sedona Sweet Arts we love the challenge of doing  your cake, in actual cake! Seriously no rice krispy  or Styrofoam  something unique.

Donna Joy usually created a mock up and template way before we ever do the cake. Even with all that we always seem to tweak the cake while it is being created. You never know until you start to carve which way the crumb will fall.  🙂

Job ~ Skateboard Cake ~ Surprise Grooms cake to be delivered with wedding cake ~ Flavor Black Forest ~ Skateboard to be replica of Grooms skateboard. Hum a skateboard? How can we make a cake with no fake elements look like a skateboard? Brainstorming sessions. While looking around we found a few skateboard cakes out there on their back with the wheels up.  No Donna Joy wanted to have the cake standing on its wheels, looking close to the real thing.

So for this cake we borrowed our neighbors skateboard. We used the skateboard for our template. Measuring scaling, creating a few mock ups, working on the sizing to get the scale as close to the real deal.

We cleaned up the wheels. Then with food grade silicone Donna Joy created a mold from the wheels.   Wanting to keep everything as tasty as possible we made the wheels from white chocolate. What a way to go, isn’t it? Then we needed the wheels to match the colors of the grooms skateboard wheels so we colored the white chocolate green, then molded the wheels. Once the wheels were molded we then painted the nut bolts to match his skateboard wheels.

We worked with the mock ups to figure how many cakes along with what sizes of cakes we needed to bake.  The cake was going to be two tiers.  The base tier, a platform of cake (with filling),  the underneath chassis for the skateboard, This cake support system was  not intended to be seen.  Then one long flatter tier that would sit on top of the cake chassis, representing the board of the skateboard. Yes we will sculpt cakes with fillings….crazy isn’t it?

Donna Joy got the logos from the Bride. The bride took the pictures with her digital camera. Then Donna Joy took the images into photoshop, where she cleaned them up and sized them. They were then printed onto frosting paper. They weren’t as perfect as we would have liked due to the method and the resolution of images.

The Skateboard design was to have the skateboard on its wheels making the board portion thicker then a real skateboard so that they could  have real cake.  It is actually carved being thicker on edges and thinner in the middle to give the look of the skateboard curving upward on the edges. Then those edges would be  airbrushed dark in color in order to hide the thickness. The cake is going to be transported completely assembled to the wedding venue.

Okay day of…… Donna Joy puts the individual elements to together. The cake chassis, along with the skateboard portion.  The fondant has yet to be placed on skateboard. Donna does a test. OUCH! The cake is cracking! Panic Panic!!!!! Oh no…..will we have cake on our face?  What to do….  Donna’s head is racing. Dana is the one who stays calm. Phone ringing, customers running in the front of store ordering food to go. Seriously? One could have a melt down. Cracking cake 4 hours to go.  Time is running out. And we wonder why Donna Joy gets high blood pressure, oh my. 

Donna suggests ideas to Dana. He tells her to set it down and think it through calmly. Does she? Yes and no. Then taking Dana’s suggestion of a 15 time out she decides to make the chassis longer. Could this cake be done with out team work? NO.   A small portion of the chassis will be seen at certain angles. Not the desired design but will do.  Donna takes the extra cake and builds on to the cake chassis. Test …YES! The cake isn’t cracking when placed on the chassis.

Now the fondant is placed on the skateboard. The edges are airbrushed. Logo is placed and wheels are attached.  Happy as the task was achieved  Donna Joy made a joke about how the cake almost killed her and the mess she made of the kitchen and herself. “”Someone needs to hose me off”

So what are your thoughts? Is this a piece of cake? We always laugh as people call to order a cake like this and then say ” have fun with it” or say “what it’s not $50 bucks?”  Yes we hear that allot, “oh I thought it would be around 50 dollars”. We love the challenge, we love, LOVE, Love,creating new things. They’re not always easy. We try with all our might to create cakes that are really cake, taste better than the look and are affordably  priced.  Can’t wait for the next cake challenge.

Woodys Sedona Wedding Cake


In today world of wedding cakes Brides and Grooms are looking for the cake to make a statement about them. Whether it being a simple or over the top cake.  There are meanings behind the look, flavor, design, and accents.

Sedona Sweet Arts is lucky to have a Cake Artist that is willing to go the extra mile to get that special touch.

Every element of this cake was custom from the frosting, flavor, topper and accents.

Originally Bride had an out of town friend that was going to do her cake.  Then her friend had a family member get ill, so just a month away we took this cake on.  Most of  our large cakes get booked  a minimum of 6 months ahead.  Donna Joy jumped through some hoops to get things done.

Pastry Chef  / Cake Artist Donna Joy prefers to make all her sugar pieces herself.  Since the ideas and themes are moving targets she generally does them free handed even though she will make or use a mold if possible.

This cake the bride requested we use her favorite cake and frosting be used. Both recipes for the Ganache frosting and cake forwarded to Donna Joy.  She tested both out ahead of time to make sure they were workable. A few minor adjustments were made to formulas. Then the formulas were scaled to meet the needs of wedding size.  The party was a pretty good size party. The Wedding party opted to keep the cost within a certain price point, the main cake served a maximum of 83 and then a sheet cake with the same flavors was created for additional servings.

While the flavors and frosting were a must for the Bride, she also had this adorable topper created by her Aunt from paper. The arms and legs moved. The image of Bride and Groom was a reproduction of the real Bride and Groom. It’s it sweet? Donna Joy had to make some adjustment to the cake to make it work. We just love it!

The sugar adornments were all done free hand by Donna Joy. Acorns,  plants, mushrooms, dirt, green fiddle heads.  The mushrooms were created with food grade anchors so they could be placed on cake and then moved around with out moving or falling.  Then she also made a moss cake riser  to have the cake sit on and pull the theme together.

We just loved everything about creating this cake especially the flexibility of Pastry Chef Donna Joy to work with someone else  recipe, to creating the sugar pieces ,working with the Brides topper and do so all last minute.

Creative Custom Elopement Wedding Cakes


With the cost weddings increasing many Sedona Brides and Grooms are selecting to have a more intimate wedding with all the bells and whistles.  For example they select to have 45 guest or less but do most of the elements in a manner that captures them.  Creating a smaller cake may not be less time from the cake artist standpoint, as we will scratch bake the cake the day before the wedding, make homemade fondant and filling. Our Pastry Chef and Cake Artist Donna Joy custom creates the sugar flowers. So even our smaller cakes are work of art, blending the science of baking along with the art of sculpting, creating and crafting the cake.

We loved this one. A smaller wedding were the couple got married in Tlaquepaque, an award winning wedding venue and had their reception at Rene’s a upscale restaurant with gourmet European cuisine.  Rene’s a local favorite has also won many awards for their awesome ambiance and food.

The Bride wanted a cake that sang. The Orange fondant cake was done in a smaller serving size, then the  cake was adorned with edible rice paper butterflies. The flavor of the cake was Donna Joy’s Gluten Free Carrot Cake so that everyone at the wedding party could enjoy.

The next cake was created for a beautiful wedding at Amara Resort. The couple also having an intimate wedding selected to create the custom cake slighting larger with the theme of Day of the Dead.  This adorable cake topper was provided by the Bride & Groom.  The square fondant cake was stenciled in a black floral vine. The cake was adorned with Donna Joy’s hand made pastillage sugar flowers.

Custom Wedding Cakes


Sedona Sweet Arts has many Brides and Grooms that know what they want. Today’s world has really open up all the possibilities for a coup getting married.  Tiffany Blue, Black , and White were the color theme.  Simple with a touch a nature was what this couple was looking for. They came in prepared. They had a color swatch for us to match the fondant to. They knew they wanted a Tiffany blue canvas of fondant with a branch and white flowers with black centers.

So the Branch was made out of black chocolate leather match the color theme.  The sugar flowers were created by Donna Joy of Sedona Sweet Arts.    The lovely couple got married at Sedona Golf Resort.

Red Sugar Ranunculus Wedding Cakes


Here is a cake we just loved, dark red Sugar ranunculus created custom for a bride who wedding was all red flowers. We changed it up to match the florist the week before! Donna Joy had to pull a few all nighters to get these sugar flowers sculpted in time. We can’t wait to see the photos of the reception as all the flowers are suppose to be red red red. In all shades, no other colors according to the Bride. Peonies, ranunculus, and orchids were to be the only flowers used.
Donna Joy did it again making these stunning fun flowers from sugar. A buttercream canvas with accent dots in 2 colors. Created for a wedding at Sedona Rouge Hotel & Spa we love our Brides and wedding venues.

Eye Ball Cake


Cake art has really changed over the last 15 years. With many of the cake shows on TV everyone is thinking about everything and anything for a cake.  This post is about the Grooms Cake. So here were the elements

The eye lashes were what we really wanted to grab onto.  So we played and we played more. Eye lashes…..Needing them full  mascara sytle on the top. Tired so many types of ebible sugar to get the effect.  I really wanted them to curve and come away from cake. So after a week of experimenting this is what we came up with.

Ruffle Wedding Cakes


Lately we become dreaming of ruffles….. yes Sugar ruffles. Cake and Ruffles…… We have a few new designs in the works but check out these two sweet cakes.

I love this cake! Ruffles run up the sides of cake. Then it adorned with hand sculpted sugar flowers by Pastry chef and Culinary Artist Donna Joy. Don’t you love the texture of the cake?

Trendy Brides love to make their wedding fit their passions regardless to the size of the wedding party. At Sedona Sweet Arts we are seeing all kinds of wedding desserts from napoleons, eclairs, macarons, dipped strawberries, and candy including dessert bars with an assortment of yummy treats.   Sedona Sweet Arts loves creating these custom dessert bars for all size wedding parties. Here is a sweet petite four style wedding dessert display. These tasty bites are all made from scratch including the hand molded chocolate mousse cups which were filled with a bittersweet chocolate chanity style mousse. The zesty tarts are filled with Pastry Chef Donna Joy’s homemade lemon curd adorned with a fresh raspberry nestled on a flaky homemade tart shell. The last dessert on this mini dessert bar wedding is a classic creamy vanilla cheesecake.

Don’t be fooled with the frozen selection!  Everyone can buy in frozen bites to serve. The rare jewel of homemade pastries like this can not be match. Nintendo Console Cake


How fun is this cake? Make for a Nintendo lover and a foodie. The cake was scaled larger than a real Nintendo Console in order to get enough servings for the cake.
